Every edition released since 1997 (the first DVD to the restored 25th Anniversary blu-ray) uses the same 5.1 mix. And that's fine, because it sounds just like the original Dolby stereo mix, which is available on the LaserDiscs. (I compared NJL-12039.)
I would even probably say it was upmixed directly from it, especially since the left and right surrounds are basically identical, but I did catch one difference: at 35:20 on the 25th Anniversary blu-ray (a money counting scene), the 5.1 is missing some ambient atmospheric noise that's present on the LD. This applies to the 5.1 on the 1997 DVD too, and presumably every other 5.1 out there.
Unique to the 25th Anniversary BD: the very last 10 seconds of music after the end credits fade out early; the music plays out 10 seconds longer on the LD and on the 1997 DVD.
There are some subtle differences in EQ between the LD and BD throughout. Overall, there really isn't anything 'wrong' with the 5.1.
Update (1/11/2021): The US LD [12039] is identical to the Japanese LD, only 4 dB louder.
the 2016 4K release corrects the error at the end credits and the music lasts as long as it's supposed to
