After quickly skipping through the film, I don't think the 5.1 mixes diverge drastically from the theatrical Dolby stereo mix in terms of content, but their relative levels of music to dialogue and effects are quite different. The theatrical mix is generally less aggressive, with its score quieter relative to the dialogue. An actual 'change' I did notice: in the 5.1, Pesci's entrance into the house ("How you kids doin', huh?") has new diegetic music playing upstairs to make the house feel more busy and chaotic.
The theatrical mix can be found on the old Fox Video LaserDisc (which sounds great) and on the first DVD from 1999 (which sounds a bit rolled off, but still good). The two blu-rays with secondary 2.0 AC-3 tracks use downmixes of the 5.1.
The 5.1 track on the 2008 and 2015 blu-rays are identical. The UHD offers a new 5.1 mix that resembles the old 5.1 mix in terms of content, but it's mixed a bit differently: music now plays in the centre channel, and the EQ of the centre is now brighter (arguably better than the old 5.1's centre, which sounds a bit dead, but at times overly bright next to the theatrical mix). I haven't compared the two mixes too closely since they don't interest me, but below is the centre channel of the 25th Anniversary BD versus the UHD's centre. There's plenty of limiting on the UHD.
